Las Vegas, Nevada (Dec. 2011)

I recently spent a weekend in Las Vegas to see a show and was pleased that many of the restaurants at Mandalay Bay, where I was staying, offered a number of vegetarian options.  I also was pleased by how it easy was to find the restaurants using the Mandalay Bay mobile app, which included a list of all of the resort's dining venues and their menus.  

My best meal, by far, was lunch at Border Grill, which not only offered a ton of creative and clearly marked vegetarian items on its menu, but was located a safe and healthy distance from the smoke-filled casino.  Border Grill offers modern Mexican cuisine in a festive atmosphere and emphasizes organic ingredients.  Everything was delicious, but the avocado tacos (the avocado was encrusted with protein-rich quinoa, amaranth, and black sesame seeds) and plantain empanadas (stuffed with black beans, poblano sauce, and cotija cheese) were the most memorable.  Unfortunately, I do not have pictures of the food, but I do want to highlight this blurb from the restaurant's website:
